How did you start making cocktails? When I was a student working in a bar. Back then, people mostly drank long drinks, like gin and tonic, and I found making them boring, so I bought a book and started learning how to mix proper cocktails. What’s the hardest cocktail to make? I think a martini. It doesn’t have many ingredients, but getting the right balance is hard. How has Beijing’s bar scene changed since you opened Q Bar in 2006? People care a lot more about the quality of drinks, which wasn’t the case three or four years ago. But the biggest change is that a lot more locals are going to bars. When we opened in 2006, our customers were 80% foreigners. Now, it’s half locals and half foreigners. Where do you go out? I like some of the Japanese bars that have opened recently. But they can’t make a dirty martini like I can.
