A Shanghai Chef’s Favourite Eats

Shanghai chef Wang Xinhai, who teaches Chinese cuisine at The Kitchen at… (Click here), filled us in on his favourite restaurants in the city.

Xinjiang Fengwei Restaurant (Click here) I really like Xinjiang food and the staff at our cooking school often comes here for dinner. The lamb in particular is excellent; what I like the most is the whole roast sheep (kao quanyang).

Dian Shi Zhai Xiao Yan (Click here) This is a cosy restaurant that offers quality Shanghainese cuisine. My favourite dish is the slow-roasted river carp with deep-fried spring onions (cong kao hejiyu; a cold dish served as an appetiser).

Tsui Wah (Click here) I also like to cook Cantonese cuisine and I think the kitchen at Tsui Wah produces authentic flavours. I love their pineapple bun (boluo bao) – a sweet pastry that’s served warm with a slab of cold butter inside.

Hai Di Lao (Click here) From a Chinese point of view, this hotpot restaurant has the best service in Shanghai. You can get snacks, drinks and even a manicure while you wait for a table, and the staff’s attention to detail and their upbeat attitude is remarkable. It’s an excellent place to come in a group simply because it’s so entertaining. Make sure to order the noodles, which are pulled into shape with a special performance.
