DISPENCE AND DISPERSE

The function of spraying is to coat a liquid or dry material onto a surface evenly, even when that means creating speckles. Some spraying systems distribute pan oils, also called release oils, onto baking pans and troughs, while others finish crackers and snacks by applying flavouring materials. Processors can choose among various methods when selecting spraying machinery.

Electrostatic technology is the newest approach to spraying systems, applicable to both liquid and dry materials. Spinning disks, nozzles, curtain dispensers, revolving drums and turbulent tunnels offer additional methods, each with advantages.

Electrostatic sprayers use their nozzles as both metering devices and electrodes. This method establishes a high-voltage DC charge at the nozzle. Normal dispersion at the nozzle is enhanced by the electrical charge transferred to the sprayed material.

Liquids dispensed through electrostatic systems tend to divide into smaller droplets than they do when sprayed out of ordinary nozzles, thus less oil covers more surface area.

Recent engineering work addresses the problem of overspray. For example, an electrostatic spraying system designed for pan bread was revamped to use three tips per nozzle. This sets up three spray sources within each pan cavity. It lessens the "throw" required from each dispensing point, thus reducing overspray.

Stationary spray nozzles don’t suit all products. For this reason, some spraying systems employ travelling mechanisms that allow the spray nozzles to travel at the same speed as the product or pan being treated.
