Contrary to what some people believe, you will save money on whole foods if you shop at local farmers’ markets, buying directly from the source. Each farmer’s stand has its own prices, and these are often negotiable, especially if you are buying in larger quantities. The sellers are more likely to negotiate with you during the final operating hour of the market when they want to empty their supplies. This may be even more likely at a Sunday market versus a Saturday market, since it’s probably the last chance they have to sell their items for the week.

 

Another tip to stay within your budget is to rotate your produce and meat choices weekly, buying in bulk when prices are lowest.

 

You can also reduce your food budget by buying less desirable cuts of meat. I know this is counter-intuitive because most Americans are out there scarfing down boneless, skinless chicken breasts even though bone-in/skin-on chicken legs are tastier and less expensive. But if you’re shopping for poultry at a farmers’ market or from a local farm (which is ideal), they will often only sell you a whole chicken. Great! Roast the whole thing (recipe here), and after you’ve eaten it all, use the carcass to make broth (recipe here). Organ meats from local farmers are often less expensive since the general public is generally turned off by them. Making chicken liver pâté (recipe here) can be very inexpensive if your farmer doesn’t have a high demand for the livers.

 

Stews, soups, and ground meats are excellent ways to eat healthy if you are budget-conscious. Most of the recipes in this book are not expensive to make with the exception of those that call for wild salmon, other fish, scallops, or lamb chops. You can sometimes get great deals on lamb chops, however, if you buy directly from the farmer as I do.
