Try to buy bacon from a local farmer who pasture-raises pigs. Ask what the animals are being fed, and visit if you can to see their living conditions. Bacon is not inherently unhealthy, but copious amounts of feedlot pork are not good for you. See here for more information on choosing quality meats.

Preheat oven to 350°F. Place strips of bacon evenly onto an oven-safe baking rack positioned over a baking sheet (see photo). Bake until the strips are cooked to your liking, approximately 20-30 minutes depending on the thickness of the bacon.

 

If you are baking pastured pork bacon, it’s a good idea to save the fat. Allow it to cool slightly, then pour it into a glass or ceramic container to store in the refrigerator for later use in recipes and as cooking fat.
