General Description and Organisation

General: A casual steakhouse with The Best Steaks in Town, grill and bar over two levels with a live band played out in the evenings to lift the tempo over two levels. Porterhouse will boast one of the most extensive collections of Bourbons, Tequilas and Malt Whiskies around the world. Premium tastes in a relaxed environment.

Head Down to the Music in Porter House’s Bar to listen to Abu Dhabi’s best Bands from around the world – featuring classic and modern songs coupled with a large selection of Draft Beers on tap with a fully trained European team to serve all the guests needs.

 

Organisation: Restaurant Manager runs as independent outlet within hotel structure. Separate budget & P&L.

 

Rules & Regulations: Casual Dress, smart, not sloppy

 

Interior Design

General: Rustic with natural wood accents.

Grill level with mix of booths and tables, with open centre to the Bar Level.

Bar level some booths with bar tables and high table seating, long bar with multiple Draft taps.

Cashiering System: individual micros cards per waiter with shift summaries and reports to be filled for financial summaries. Manager responsible for end day reports and balance.

Computer: 1 for use of Sous Chef and Manager in back of house. 5 micros terminals or Point of sales plus additional handhelds as well as 1 Laptop for the Ground Floor Hostess Area

 

Printer: Micros printer in main kitchen and 2 on bar for product chits (1 up – 1 down). 3 printers for guest checks. 1 computer printer – small for Sous Chef and Rest Manager.

 

Telephone: 4 lines – one in kitchen, one at grill bar and one in main bar on service side and one for the hostess
