Vareniki with cottage cheese

Ingredients:

Dough: 300 g of flour, 1 egg, 150 g of water. Filling: 500 g of cottage cheese, 2 eggs, 50 g of sugar, salt.

Method of preparation:

Knead dough from water, eggs and flour; roll out finely. Make rounds with a glass or a cup. Then combine all ingredients for filling and run through a sieve. Put the filling in center of every round and pinch the opposite edges. Cook in boiling lightly salted water until vareniki are on the surface. Serve with sugar and sour cream or jam (to taste).

Kulish

Ingredients: 1 chicken thigh, 4-5 potatoes, 2 carrots, 2 onions, 150 g of millet, 2 eggs, a little piece of salo.

Method of preparation:

Boil the chicken in a saucepan to make a bouillon. Add salt to taste. Cut potatoes and put potato cubs in bouillon. While potatoes are boiling, make a gravy. Fry grated carrots and chopped onions with salo. Rinse millet and put it in saucepan. Then add there gravy and cook until millet is done. When everything is ready, take 2 eggs, split them in bowl, mix it well and pour a thin stream into a boiling soup. And also we can add some herbs there. If you like smoked meat, you can add a little. Kulish is ready. Serve it in parts you need. Enjoy your meal!

 

Ukrainian Zrazy

Ingredients: 10 potatoes, 2 eggs, 2 onions, 200 g of mushrooms, a flavoring of black pepper, salt.

Method of preparation:

Firstly, peel and wash potatoes and boil to ready. Pour the water, mash and cool potatoes. Peel and chop onions, fry it with oil until golden brown.

Secondly, add eggs and a part of fried onion to mashed potatoes. Also, add a pepper and salt and stir this ingredients. Shape prepared potato into scones.

Thirdly, wash mushrooms, cut into small pieces and fry to ready. After that, stuff potato scones by mass of mushrooms. Roll these potato zrazy in breadcrumbs and fry with heated oil until golden brown on both sides. Then take zrazy of a stove, place it on a dish and serve at table with sour cream.

Vegetable Soup

Ingredients: 2 carrots, 2 turnips, 1 small marrow,1 onion, 1 potato,1 stick celery, 1 clove garlic, 20 g butter, salt pepper, 1 litre water, 2 sprigs parsley.

Method of preparation:

Peel and wash all the vegetables, slice them. Melt the butter in a saucepan and add the vegetables. Cook for 4 to 5 minutes on a low heat, stirring continuously. Add salt and pepper and pour in 1 litre of very hot water. Bring to the boil and simmer for 25 minutes. Chop the parsley in the mill and sprinkle over soup just before serving. Add a spoon of fresh cream.

Uzvar

Ingredients to 3 liters of water:
Dried fruits: 50 g of apples, 50 g of apricots, 50 g of raisins, 50 g of prunes, sugar.

 

Method of preparation:

Put the dried fruits in cold water and put on fire. Simmer for 30 minutes. Add sugar to taste and cool.
